hi, 3 of my websites developed in Joomla! (1.5) CMS tool last week. I have restored the site back but happened this again later. How can i protect the sites with more security?

change the passwords regularly and make sure you dont fill in a fake website which steal your info
You could contact the site providers, Joomla.
Create good passwords and do not login in public computers and make sure to never save your password. and make sure your computer is safe and not key logged.
The last hack for Joomla 1.5.x hit anyone that did not upgrade to version 1.5.6. So the vulnerability was there even if you followed sake practices. Make sure you have upgraded to 1.5.6 which fixes the vulnerability.
Don’t leave your administrtator user as ‘admin’ which is the Joomla default. Create another super administrator with a uniquesname and then disable he default admin acocunt.
